One of Canada's most visionary chefs, Claudio Aprile was born in Uruguay, raised in Toronto, and built a 30+ year career in kitchens around the world. His time as executive chef at London's Bali Sugar earned international acclaim before he returned to Toronto in 2000, where his work at Senses further cemented his reputation for innovative cooking.
In 2005, Aprile opened his first restaurant, Colborne Lane, which was lauded as one of the best restaurants in the world and established him as one of Canada's most inventive chefs.
But it was Origin, which Aprile founded in 2010, that defined the next era of his career — and Toronto dining. Origin's open-kitchen format broke from convention, creating an interactive, engaging dining experience that reimagined fine dining as fast, fresh, and unguarded. The concept struck a nerve: Toronto Life and NOW Magazine both named it the #1 restaurant in the city, and it remains a touchstone for how Aprile thinks about hospitality — direct, generous, and built around genuine connection between kitchen and guest. That DNA carries forward into his current work.
In 2019, Aprile consulted with Liberty Group on Xango, an Asian and Latin American concept that drew international media attention. He now serves as Culinary Director for a boutique restaurant group, overseeing the culinary program at Via Allegro and Dimario's.
Aprile has also served as a judge on CTV's MasterChef Canada since 2014, one of the top-rated programs in Canadian television across all key demographics.
Maria and Chris Pagonis are the husband-and-wife team behind Bar Origin, bringing decades of entrepreneurial experience, hospitality leadership, and community involvement to Burlington's evolving dining scene.
For Maria, hospitality has been a lifelong calling. Raised by Greek immigrant parents who owned and operated family restaurants, she grew up immersed in the industry, learning every aspect of the business from an early age. She later went on to help lead front-of-house operations at Sotiris Greek Restaurant, one of Burlington's most beloved family-run establishments, where she built a reputation for exceptional guest experience, team leadership, and community engagement.
Alongside her, Chris has spent his career building and operating successful family businesses, earning a reputation for his strong work ethic, resilience, and commitment to serving customers and employees alike. Together, they have spent decades navigating the challenges and rewards of entrepreneurship while raising a family and fostering deep connections within their community.
