One of Canada's most visionary chefs, Claudio Aprile was born in Uruguay, raised in Toronto,
and has built a 30+ year career in kitchens around the world. As executive chef at London's Bali
Sugar, he earned international acclaim before returning to Toronto in 2000, where his work at
Senses further established his reputation for innovative cooking.
In 2005, Aprile opened his first restaurant, Colborne Lane, which was recognized as one of the
world's best and cemented his standing as one of Canada's most inventive chefs.
In 2010, Aprile founded Origin, a restaurant that helped define a new era of Toronto dining. Its
open-kitchen format created an interactive, engaging experience that reimagined fine dining as
fast, fresh, and unguarded. The concept struck a nerve: Toronto Life and NOW Magazine both
named Origin the #1 restaurant in the city. Its spirit - direct, generous, and built around genuine
connection between kitchen and guest - continues to inform Aprile's approach to hospitality.
In 2019, Aprile consulted with Liberty Group on Xango, an Asian and Latin American concept
that garnered international media attention. He now serves as Culinary Director for a boutique
restaurant group, overseeing the culinary programs at Via Allegro and Dimario's. Since 2014, Aprile has also served as a judge on CTV's MasterChef Canada, one of Canada's
top-rated television programs across key demographics.
Maria and Chris Pagonis are the husband-and-wife team behind Bar Origin, bringing decades of
entrepreneurial experience, hospitality leadership, and deep community connections to
Burlington's evolving dining scene.
For Maria, hospitality has been a lifelong calling. Raised by Greek immigrant parents who
owned and operated family restaurants, she grew up immersed in the industry, learning every
aspect of the business from an early age. She later helped lead front-of-house operations at
Sotiris Greek Restaurant, one of Burlington's beloved family-run establishments, where she
developed a reputation for exceptional guest experience, team leadership, and community
engagement.
Chris has spent his career building and operating successful family businesses, earning a
reputation for his strong work ethic, resilience, and commitment to customers and employees.
Together, Maria and Chris have spent decades navigating the challenges and rewards of
entrepreneurship while raising a family and building lasting connections within their community.
